2 cups cooked seasoned taco meat, ground beef or ground turkey

24 scoop-style tortilla chips

1 cup shredded cheddar cheese

1/2 cup shredded Monterey Jack cheese

1 tablespoon taco seasoning

2 tablespoons water

Optional toppings:

Sour cream

Diced tomatoes

Sliced green onions

Jalapeño slices

Avocado

Fresh cilantro

Salsa

Instructions

1. Preheat oven to 375°F (190°C).

2. Line a baking sheet or mini muffin pan with parchment paper.

3. Cook ground beef or turkey in a skillet over medium-high heat until fully browned.

4. Drain excess grease.

5. Stir in taco seasoning and water.

6. Simmer for 2 to 3 minutes until the meat is moist but not watery.

7. Let the taco meat cool slightly.

8. Arrange scoop tortilla chips on the prepared baking sheet.

9. Add a small pinch of shredded cheese inside each chip.

10. Spoon about 1 tablespoon of taco meat into each chip.

11. Top with remaining cheese.

12. Bake for 5 to 7 minutes, until the cheese melts.

13. Let cool for 2 minutes.

14. Add fresh toppings and serve immediately.

Notes

Use scoop-style tortilla chips because they hold the filling better than flat chips.

Do not overfill the chips, or they may crack.

The taco meat should be moist but not watery.

Add fresh toppings after baking to keep the chips crispy.

Serve right away for the best crunch.

Cheese is strongly recommended, even though the recipe uses two main ingredients.
