These Two-Ingredient Burrito Cups are crispy on the outside, cheesy on the inside, and packed with seasoned ground beef. Although made with just two main ingredients, adding taco seasoning and shredded Mexican cheese creates a richer homemade flavor. Perfect for busy weeknights, Taco Tuesday, game day, lunchboxes, meal prep, or family dinners.

  • 2 large flour tortillas (8 to 10 inches)
  • 2 cups cooked seasoned ground beef

  • 1 teaspoon taco seasoning
  • ½ cup shredded Mexican cheese blend

Instructions

1. Prepare the Oven

Preheat the oven to 375°F (190°C).

Lightly grease a standard 12-cup muffin pan using cooking spray or a thin layer of vegetable oil.


2. Cut the Tortillas

Using a 5-inch round cutter or a large drinking glass, cut circles from the flour tortillas.

If the tortillas are cold or slightly dry, microwave them for 10–15 seconds under a damp paper towel to make them flexible.

Press each tortilla circle firmly into the muffin cups.


3. Prepare the Filling

If using freshly cooked ground beef:

  • Cook over medium-high heat until fully browned.
  • Drain excess grease.
  • Stir in taco seasoning with 2 tablespoons of water.

Mix half of the shredded cheese into the beef for extra creaminess.


4. Fill the Cups

Divide the beef evenly between each tortilla cup.

Sprinkle the remaining cheese over the top.

Do not overfill, or the tortilla shells may become soft instead of crispy.


5. Bake

Bake for 12–15 minutes.

The tortilla edges should become deep golden brown while the cheese melts completely.

Watch carefully during the final 2 minutes to avoid burning the edges.


6. Cool

Allow the burrito cups to cool for 2–3 minutes.

Carefully loosen the edges with a butter knife before removing.


7. Garnish

Top with:

  • Sour cream
  • Guacamole
  • Salsa
  • Lettuce
  • Tomatoes
  • Cilantro
  • Jalapeños
  • Avocado

 

Serve immediately.
