3 large ripe bananas (about 1¼ cups mashed)

1 box yellow cake mix (15.25 oz / 432 g)

Optional Add-Ins

½ cup chocolate chips

½ cup chopped walnuts or pecans

1 teaspoon vanilla extract

½ teaspoon cinnamon

2 tablespoons melted butter (for a richer crust)

Instructions

  • Preheat oven to 350°F (175°C).
  • Grease a 9×5-inch loaf pan or line it with parchment paper.
  • Mash bananas in a large bowl until mostly smooth.
  • Add cake mix and stir until fully combined.
  • Fold in any optional add-ins if desired.
  • Pour batter into prepared loaf pan.
  • Smooth the top using a spatula.
  • Bake for 40–45 minutes or until a toothpick inserted into the center comes out clean.
  • Cool in the pan for 10 minutes.
  • Transfer to a wire rack and cool completely before slicing.

Notes

For the sweetest flavor, use bananas with dark brown spots.

Do not overmix the batter.

For a bakery-style crust, add 2 tablespoons melted butter.

Internal temperature should reach 200–205°F (93–96°C).
