Ingredients
For the Chicken
1 lb (450 g) boneless, skinless chicken breast, cut into 1-inch cubes
1 tablespoon olive oil
1 tablespoon cornstarch
1/2 teaspoon smoked paprika
1/4 teaspoon ground black pepper
1/8 teaspoon salt
For the Honey Garlic Sauce
1 1/2 tablespoons honey
2 tablespoons low-sodium soy sauce
2 garlic cloves, finely minced
1 teaspoon freshly grated ginger
1 teaspoon rice vinegar
1 tablespoon water, optional
1/4 teaspoon red pepper flakes, optional
For Garnishing
1 teaspoon sesame seeds
2 green onions, thinly sliced
Instructions
1. Cut and dry the chicken: Cut the chicken into uniform 1-inch pieces. Pat thoroughly dry with paper towels.
2. Season the chicken: Toss the chicken with cornstarch, smoked paprika, black pepper, and salt until lightly and evenly coated.
3. Sear the chicken: Heat olive oil in a 12-inch skillet over medium-high heat. Add chicken in a single layer, working in batches if needed. Cook for about 6–8 minutes, turning until golden and the thickest pieces reach 165°F (74°C).
4. Prepare the sauce: In a small bowl, whisk honey, low-sodium soy sauce, minced garlic, grated ginger, rice vinegar, and optional red pepper flakes.
5. Glaze the chicken: Reduce heat to medium-low. Return all cooked chicken to the skillet, pour in the sauce, and stir for 1–2 minutes until glossy and lightly thickened. Add up to 1 tablespoon water if the sauce becomes too thick.
6. Garnish and serve: Remove from heat. Sprinkle with sesame seeds and sliced green onions. Serve immediately with rice or steamed vegetables.
Notes
Dry the chicken thoroughly before adding cornstarch to promote browning.
Use a large skillet and cook in batches to avoid steaming.
Cornstarch creates a light crust, not a deep-fried coating.
Add the honey sauce only after the chicken has browned and cooked through.
Keep the glaze at a gentle simmer to prevent the honey from burning.
Check the thickest chicken pieces with a thermometer; they must reach 165°F (74°C).
Refrigerate leftovers promptly in an airtight container for up to 3–4 days.
