A creamy no-bake layered dessert made with a buttery vanilla cookie crust, fluffy strawberry cheesecake filling, sweet pineapple cream, homemade whipped cream, and fresh fruit. Perfect for summer parties, Easter, Mother’s Day, potlucks, birthdays, and family gatherings.

Vanilla Cookie Crust

  • 2½ cups vanilla cookie crumbs (about 40 vanilla wafers)
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • ¼ teaspoon fine sea salt

Strawberry Cheesecake Layer

  • 8 ounces (226 g) full-fat cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • ½ cup whipped topping
  • 1½ cups fresh strawberries, diced and patted dry

Pineapple Cream Layer

  • 1 cup crushed pineapple, thoroughly drained
  • 1 cup whipped topping
  • 2 tablespoons powdered sugar

Homemade Whipped Cream

  • 2 cups cold heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Decoration

 

  • Fresh strawberry halves
  • Pineapple chunks
  • White chocolate curls
  • Fresh mint leaves (optional)

Instructions

1.

Lightly grease a 9×13-inch baking dish.


2.

Combine vanilla cookie crumbs, melted butter, sugar and salt.

Mix until every crumb is coated.


3.

Press firmly into the pan using the bottom of a measuring cup.

Refrigerate 20 minutes.


4.

Beat softened cream cheese on medium speed for 3 minutes until perfectly smooth.


5.

Mix in powdered sugar.

Add vanilla.

Beat another minute.


6.

Fold in whipped topping.

Fold in diced strawberries gently.


7.

Spread evenly over chilled crust.

Smooth using an offset spatula.

Refrigerate another 20 minutes.


8.

Drain pineapple for at least 15 minutes.

Press gently with paper towels to remove excess moisture.


9.

Fold pineapple into whipped topping with powdered sugar.

Spread carefully over cheesecake layer.


10.

Beat heavy cream until soft peaks.

Add powdered sugar and vanilla.

Continue until medium peaks form.

Do not overwhip.


11.

Spread whipped cream evenly.

Decorate with strawberries, pineapple pieces and white chocolate curls.


12.

Cover loosely.

Chill at least 6 hours.

Preferably overnight.

 

Slice using a warm knife cleaned after every cut.

Notes

✔ Drain pineapple very well.

✔ Dry strawberries before mixing.

✔ Always use room-temperature cream cheese.

✔ Chill between layers.

✔ Overnight chilling gives cleaner slices.

✔ Use full-fat cream cheese.

✔ Homemade whipped cream produces the best texture.
