This Pineapple Cherry Jubilee Delight is a refreshing no-bake layered dessert featuring a buttery vanilla cookie crust, creamy cherry cheesecake filling, fluffy pineapple cream, homemade whipped cream, and fresh fruit. Ingredients

Vanilla Cookie Crust

  • 2½ cups finely crushed vanilla cookies
  • ½ cup unsalted butter, melted
  • 2 tbsp granulated sugar (optional)
  • ¼ tsp fine salt

Cherry Cheesecake Layer

  • 8 oz (226 g) full-fat cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp pure vanilla extract
  • 1½ cups cherry pie filling

Pineapple Cream Layer

  • 1 cup crushed pineapple, thoroughly drained
  • 1 cup whipped topping

Whipped Cream Layer

  • 2 cups heavy whipping cream (cold)
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract

Garnish

 

  • Fresh cherries
  • Pineapple chunks
  • White chocolate curls

Instructions

Step 1

Grease a 9×13-inch baking dish lightly.

Mix crushed vanilla cookies, melted butter, sugar, and salt until evenly moistened.

Press firmly into the pan using the bottom of a measuring cup.

Refrigerate for 20 minutes.


Step 2

Beat softened cream cheese for about 2 minutes until completely smooth.

Gradually beat in powdered sugar.

Add vanilla.

Fold in the cherry pie filling carefully.

Spread evenly over the chilled crust.


Step 3

Drain crushed pineapple extremely well using a fine mesh sieve.

Press gently with paper towels to remove excess moisture.

Fold into whipped topping until combined.

Spread evenly over the cherry layer.


Step 4

Using a chilled bowl, whip heavy cream.

Once slightly thickened, add powdered sugar and vanilla.

Continue whipping until stiff peaks form.

Spread gently over the pineapple layer.


Step 5

Decorate with

  • fresh cherries
  • pineapple chunks
  • white chocolate curls

Cover carefully.

Refrigerate at least 6 hours.

For best texture, chill overnight.

Slice using a warm knife.

 

Serve cold.

Notes

✔ Drain pineapple thoroughly to prevent watery layers.

✔ Room-temperature cream cheese blends much more smoothly.

✔ Cold heavy cream whips faster and creates firmer peaks.

✔ Chill overnight whenever possible.

✔ Press the crust very firmly to prevent crumbling.

✔ Clean the knife after every slice for bakery-style squares.

 

✔ Do not freeze decorated cherries until serving day.
