This Pineapple Blueberry Cream Paradise is a refreshing no-bake dessert made with a buttery graham cracker crust, a fluffy pineapple cream cheese filling, juicy blueberries, and sweet blueberry preserves. Finished with whipped cream, toasted coconut, and white chocolate curls, it’s the perfect make-ahead dessert for summer gatherings, holidays, potlucks, and family celebrations.

Graham Cracker Crust

  • 2½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tbsp granulated sugar
  • ¼ tsp fine sea salt

Pineapple Cream Filling

  • 16 oz (454 g) full-fat cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp pure vanilla extract
  • 1 cup crushed pineapple, thoroughly drained
  • 2 cups whipped topping, thawed

Blueberry Layer

  • 2 cups fresh blueberries
  • ½ cup blueberry preserves

Decoration

  • whipped cream rosettes
  • fresh blueberries
  • pineapple tidbits
  • toasted coconut flakes
  • white chocolate curls
  • fresh mint leaves

Instructions

1. Prepare the crust

Mix the graham cracker crumbs, sugar, salt, and melted butter until the mixture resembles wet sand.

Firmly press into a greased 9×13-inch baking dish using the bottom of a measuring cup.

Refrigerate for 20 minutes.

Optional: Bake for 8 minutes at 325°F (163°C) for a firmer crust. Cool completely.


2. Drain the pineapple

Place the crushed pineapple in a fine mesh strainer for 15–20 minutes.

Press gently using the back of a spoon.

Pat dry with paper towels.

This prevents excess moisture.


3. Prepare the filling

Beat the softened cream cheese for about 3 minutes until smooth.

Add powdered sugar.

Mix again.

Add vanilla.

Fold in the drained pineapple.

Finally fold in the whipped topping using a silicone spatula.

Do not overmix.


4. Assemble

Spread half of the pineapple filling over the chilled crust.

Scatter blueberries evenly.

Drop spoonfuls of blueberry preserves.

Lightly swirl using a butter knife.

Cover with the remaining filling.

Smooth the top.


5. Decorate

Pipe whipped cream rosettes.

Top with blueberries.

Add pineapple tidbits.

Sprinkle toasted coconut.

Finish with white chocolate curls and mint.


6. Chill

Cover tightly.

Refrigerate at least 6 hours.

For perfect slices, chill overnight (8–12 hours).

 

Slice using a hot knife wiped clean after every cut.
