Fruit Filling

  • 4 cups fresh peaches, peeled if desired and sliced about ½ inch thick
  • 2 cups fresh blueberries, rinsed and thoroughly dried
  • ¾ cup granulated sugar
  • 2 tablespoons light brown sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon fine salt

Cream Cheese Layer

  • 8 ounces full-fat cream cheese, softened
  • ⅓ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons sour cream

Cobbler Topping

  • 1½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon fine salt
  • ½ cup cold unsalted butter, cut into small cubes
  • ¾ cup cold whole milk
  • 1 teaspoon vanilla extract

Golden Crust Finish

  • 2 tablespoons granulated sugar
  • 1 tablespoon turbinado sugar
  • 2 tablespoons unsalted butter, melted

Instructions

  • Preheat the oven to 375°F (190°C). Place an oven rack in the middle position. Butter a 9×13-inch baking dish.
  • Add the sliced peaches and thoroughly dried blueberries to a large mixing bowl. Add the granulated sugar, brown sugar, cornstarch, lemon juice, vanilla, cinnamon, and salt.
  • Fold gently until the fruit is evenly coated. Let the mixture stand for 10 minutes. Do not drain the juices that collect in the bowl.
  • Transfer the fruit and all its juices to the prepared baking dish. Spread it into an even layer without crushing the blueberries.
  • Make the cream cheese layer. Beat the softened cream cheese and sugar until smooth and free of large lumps.
  • Add the egg, vanilla, and sour cream. Mix on low to medium speed just until creamy and combined.
  • Spoon the cream cheese mixture over the fruit in irregular dollops. Do not spread it into one solid layer. Leave visible gaps so fruit can bubble through during baking.
  • Make the cobbler topping. Whisk together the flour, sugar, baking powder, and salt.
  • Add the cold cubed butter. Cut it into the flour with a pastry cutter, two forks, or clean fingertips until the mixture resembles coarse crumbs with some pea-size pieces of butter remaining.
  • Pour in the cold whole milk and vanilla. Fold gently just until a thick, soft, sticky dough forms. Do not keep mixing once the dry flour disappears.
  • Drop spoonfuls of dough irregularly over the cream cheese and fruit. Leave several small openings rather than covering the entire surface.
  • Sprinkle the top evenly with granulated sugar and turbinado sugar. Lightly drizzle the melted butter over the raised pieces of dough.
  • Bake for 50–55 minutes, or until the topping is deeply golden and the fruit filling is visibly bubbling around the edges and through several openings.
  • Check the center rather than relying only on the browned edges. Because the cream cheese mixture contains egg, the egg-containing portion should be fully cooked; USDA lists 160°F (71.1°C) for eggs.
  • If the top browns too quickly before the center finishes, loosely cover the darkest areas with foil and continue baking.
  • Remove from the oven and allow the cobbler to rest for 15–20 minutes. This gives the fruit juices time to thicken.

 

  • Serve warm with vanilla ice cream. Garnish with fresh peaches, blueberries, powdered sugar, and mint if desired.

Notes

  • Use ripe but still firm peaches. Very soft fruit can release too much liquid.
  • Dry blueberries well after washing.
  • Keep the butter and milk cold until the topping is mixed.
  • The topping dough should be thick and scoopable, not pourable.
  • Do not smooth the topping. Rough peaks produce more golden edges.
  • Turbinado sugar gives the top the coarse, sparkling crunch seen in the reference presentation.
  • Do not make the cream cheese layer solid. The visible gaps create the peach-blueberry-cheesecake marbling.
  • Wait at least 15 minutes before serving. The filling will look looser straight from the oven.

 

  • Refrigerate leftovers within 2 hours. USDA and FDA food-safety guidance recommends refrigerating perishable cooked foods within that window.
