Cobbler Batter

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ¼ tsp fine sea salt
  • 1 cup whole milk (room temperature)
  • ½ cup unsalted butter, melted

Optional Crispy Crust Upgrade (Highly Recommended)

(This produces the beautiful crust seen in your photo.)

  • 1 tbsp coarse sugar
  • 1 tbsp cold grated butter

For Serving

  • Vanilla bean ice cream
  • Fresh peach slices
  • Ground cinnamon
  • Fresh mint leaves (optional)

Instructions

Step 1

Preheat oven to 350°F (175°C).

Place the butter into a 9×13-inch baking dish and allow it to melt completely while the oven preheats.

Step 2

Peel and slice peaches into approximately ½-inch slices.

Combine with:

  • sugars
  • lemon juice
  • vanilla
  • cinnamon
  • nutmeg
  • cornstarch

Mix gently.

Rest 10 minutes.

Step 3

Whisk together

  • flour
  • sugar
  • baking powder
  • salt

Step 4

Pour in milk gradually.

Whisk only until smooth.

Avoid overmixing.

Step 5

Remove baking dish from oven.

Spread melted butter evenly.

Pour batter directly over butter.

Do NOT stir.

Step 6

Carefully spoon peaches and juices evenly over batter.

Again—

Do NOT stir.

Step 7

(Optional but recommended)

Sprinkle coarse sugar across the surface.

Scatter grated cold butter over the top.

These two small additions produce a bakery-style crispy golden crust.

Step 8

Bake 45–50 minutes until:

✔ deep golden brown

✔ bubbling edges

✔ crisp surface

✔ internal temperature about 200°F

Step 9

Cool 15 minutes.

Serve warm with vanilla ice cream.

Notes

✔ Fresh peaches produce the richest flavor.

✔ Frozen peaches must be thawed and drained.

✔ Canned peaches should be packed in juice—not syrup.

✔ Do not stir the batter and peaches.

✔ Cooling allows the filling to thicken naturally.
