Vanilla Cookie Crust

  • 2½ cups finely crushed vanilla wafer cookies
  • ½ cup unsalted butter, melted
  • 1 tablespoon granulated sugar
  • ¼ teaspoon fine sea salt

Peach Cream Filling

  • 8 oz (226 g) full-fat cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 2 cups fresh peaches, diced and patted dry
  • 1 cup whipped topping

Homemade Whipped Cream

  • 2 cups heavy whipping cream (cold)
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract

Decoration

 

  • Fresh peach slices
  • White chocolate curls
  • Vanilla cookie crumbs

Instructions

Step 1

Finely crush the vanilla cookies until they resemble fine sand.


Step 2

Mix the crumbs with melted butter, sugar, and sea salt until evenly coated.


Step 3

Press the mixture firmly into a greased 9×13-inch baking dish using the bottom of a measuring cup.


Step 4

Refrigerate the crust for 20–30 minutes.


Step 5

Beat the softened cream cheese for about 2–3 minutes until completely smooth.


Step 6

Gradually add the powdered sugar and vanilla extract.


Step 7

Fold the diced peaches into the mixture using a silicone spatula.


Step 8

Gently fold in the whipped topping.


Step 9

Spread evenly over the chilled crust.


Step 10

In a chilled mixing bowl, whip the heavy cream with powdered sugar and vanilla until medium-stiff peaks form.


Step 11

Spread the whipped cream over the peach filling.


Step 12

Decorate with fresh peach slices, white chocolate curls, and cookie crumbs.


Step 13

Cover and refrigerate at least 5 hours or overnight.

Slice using a hot knife for clean squares and serve chilled.
