This Million Dollar Pineapple Dessert combines a buttery shortbread crust, rich pineapple cheesecake filling, fluffy whipped cream, toasted coconut, and juicy pineapple pieces. Shortbread Crust

  • 2 cups finely crushed shortbread cookies
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • Pinch of fine sea salt

Pineapple Cheesecake Filling

  • 16 oz (454 g) full-fat cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 can (20 oz) crushed pineapple, thoroughly drained
  • 2 tablespoons sour cream (optional)

Whipped Topping

  • 2 cups cold heavy whipping cream
  • 2 tablespoons powdered sugar

Garnish

  • ½ cup toasted coconut flakes
  • 1 cup pineapple chunks
  • White chocolate curls

Instructions

Step 1

Crush the shortbread cookies into fine crumbs using a food processor or rolling pin.


Step 2

Combine cookie crumbs, melted butter, sugar, and salt until every crumb is coated.


Step 3

Press firmly into a greased 9×13-inch baking dish using the bottom of a measuring cup.


Step 4

Refrigerate the crust for 20 minutes.


Step 5

Drain the crushed pineapple thoroughly using a fine mesh sieve. Press gently with paper towels to remove excess moisture.


Step 6

Beat softened cream cheese for about 2 minutes until completely smooth.


Step 7

Mix in powdered sugar and vanilla extract.


Step 8

Fold the drained pineapple into the cream cheese mixture.


Step 9

Spread evenly over the chilled crust.


Step 10

Whip the heavy cream with powdered sugar until medium peaks form.


Step 11

Spread the whipped cream evenly over the pineapple layer.


Step 12

Top with toasted coconut, pineapple chunks, and white chocolate curls.


Step 13

Cover and refrigerate for at least 6 hours, preferably overnight.

Slice with a warm knife and serve chilled.
