Rich dark chocolate cupcakes filled with a thick, glossy raspberry compote and topped with fluffy raspberry buttercream, fresh raspberries, and dark chocolate curls. Cut one open to reveal a ruby-red raspberry center that slowly spills into the moist chocolate crumb.

Chocolate Cupcakes

  • 1 cup (125 g) all-purpose flour
  • 1/2 cup (45 g) unsweetened cocoa powder
  • 3/4 cup (150 g) granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine salt
  • 1 large egg, room temperature
  • 1/2 cup (120 ml) whole milk, room temperature
  • 1/3 cup (80 ml) neutral vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup (120 ml) hot brewed coffee or hot water

Raspberry Lava Filling

  • 1 1/2 cups (about 185 g) raspberries, fresh or frozen
  • 1/3 cup (67 g) granulated sugar
  • 1 tablespoon fresh lemon juice
  • Pinch of fine salt
  • 1 tablespoon (8 g) cornstarch
  • 1 tablespoon (15 ml) cold water

Raspberry Buttercream

  • 1 cup (226 g) unsalted butter, softened
  • 3 1/2 cups (420 g) powdered sugar
  • 23 tablespoons thick, cooled reduced raspberry puree
  • 1 teaspoon vanilla extract
  • Pinch of fine salt
  • 12 teaspoons heavy cream or milk, only if needed

  • 12 fresh raspberries
  • 23 oz (55–85 g) dark chocolate, for curls

Instructions

1. Make the raspberry filling

Add the raspberries, sugar, lemon juice, and salt to a small saucepan.

Cook over medium-low heat for about 5–7 minutes, stirring frequently. Gently crush some of the raspberries as they soften.

Mix the cornstarch and cold water in a separate small bowl until completely smooth.

Stir the slurry into the simmering raspberries.

Cook for another 1–2 minutes, stirring constantly, until the mixture is thick and glossy.

Transfer to a shallow bowl and cool completely. The filling should resemble a loose, thick preserve rather than a thin sauce.

2. Prepare the oven and pan

Preheat the oven to 350°F (175°C).

Position a rack in the center of the oven.

Line a standard 12-cup muffin pan with cupcake liners.

3. Mix the dry ingredients

Whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

Break apart any lumps of cocoa.

4. Add the wet ingredients

In another bowl, whisk the egg, milk, vegetable oil, and vanilla.

Add the wet ingredients to the dry mixture.

Stir gently until almost combined.

5. Add the hot coffee

Slowly pour in the hot coffee while stirring gently.

The batter will be relatively thin. This is normal.

Do not continue mixing once the batter is smooth.

6. Bake

Divide the batter evenly between 12 cupcake liners, filling each about two-thirds full.

Bake for 17–20 minutes.

Begin checking at 17 minutes. A toothpick inserted into the cake should come out with a few moist crumbs but no raw batter.

Cool in the pan for about 5 minutes.

Transfer the cupcakes to a wire rack and cool completely.

7. Prepare concentrated raspberry puree

Simmer about 1/2 cup raspberry puree over medium-low heat until reduced to roughly 3 tablespoons.

For smoother buttercream, strain out the seeds.

Cool the reduction completely before using it.

8. Make the raspberry buttercream

Beat the softened butter for 3–4 minutes until creamy and lighter in color.

Gradually beat in the powdered sugar.

Add the vanilla and salt.

Beat in 2 tablespoons of cooled raspberry reduction.

Add the remaining raspberry reduction gradually only if needed for flavor and color.

If the buttercream is too thick, add cream or milk 1 teaspoon at a time.

It should hold a defined piping peak.

9. Core the cupcakes

Once completely cool, remove a small cylinder from the middle of each cupcake.

Make each cavity approximately 1 inch wide and 1 inch deep.

Do not cut through the bottom.

10. Add the raspberry lava center

Spoon approximately 1–1 1/2 tablespoons of cooled raspberry filling into each cavity.

Fill close to the top without overflowing.

11. Pipe the frosting

Transfer the raspberry buttercream to a piping bag fitted with a large star tip.

Pipe a generous, tall swirl over each cupcake.

12. Decorate

Top each cupcake with one fresh raspberry.

Finish with irregular curls or small shards of dark chocolate.

 

For the dramatic lava presentation, cut a cupcake vertically through its center shortly before serving.

Notes

The filling matters: Do not use a thin raspberry sauce. It needs to be thick and glossy or it may soak into the chocolate crumb instead of forming the visible center.

Cool everything: Both the cupcakes and raspberry components must be cool before assembly.

For stronger pink frosting: Reduce the raspberry puree instead of adding more unreduced puree. This gives stronger color and flavor without introducing excessive liquid.

Coffee: Hot coffee deepens the cocoa flavor. Hot water can be substituted in the same quantity.

Frozen raspberries: They work well for the cooked filling and puree. Fresh raspberries are preferable for the final garnish.

Do not overbake: Begin checking the cupcakes at 17 minutes.

 

For the reference-photo appearance: Use dark cupcake liners, pipe a tall raspberry-pink swirl, place one raspberry upright on top, and add irregular dark chocolate curls.
