This Lemon Strawberry Dream Lush is a refreshing no-bake layered dessert featuring a buttery vanilla cookie crust, creamy lemon cheesecake filling, fresh strawberry cream, and fluffy homemade whipped cream. Perfect for Easter, Mother’s Day, summer parties, baby showers, or any special occasion.

Ingredients

Vanilla Cookie Crust

  • 2½ cups finely crushed vanilla wafer cookies
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • pinch fine sea salt

Lemon Cheesecake Layer

  • 8 oz (226 g) full-fat cream cheese, softened
  • 1 cup powdered sugar
  • ½ cup lemon curd
  • 1 tablespoon fresh lemon zest
  • 1 teaspoon vanilla extract
  • 1 teaspoon fresh lemon juice

Strawberry Cream Layer

  • 2 cups fresh strawberries, diced
  • 1 cup whipped topping
  • 2 teaspoons powdered sugar
  • 1 teaspoon cornstarch (optional)

Homemade Whipped Cream

  • 2 cups cold heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Decoration

  • Fresh strawberries
  • Lemon slices
  • White chocolate curls
  • Lemon zest

Instructions

Step 1

Lightly grease a 9×13-inch baking dish.


Step 2

Combine cookie crumbs, sugar, salt and melted butter until evenly moistened.


Step 3

Firmly press into the baking dish using the bottom of a measuring cup.

Refrigerate for 20 minutes.


Step 4

Beat softened cream cheese for 2 minutes until smooth.


Step 5

Mix in powdered sugar.


Step 6

Add lemon curd, vanilla, lemon juice and zest.

Beat until silky.


Step 7

Spread evenly over chilled crust.

Return to refrigerator.


Step 8

Pat strawberries dry with paper towels.

Fold gently into whipped topping.


Step 9

Spread strawberry layer carefully over cheesecake layer.

Chill another 20 minutes.


Step 10

Whip cold heavy cream with powdered sugar and vanilla until stiff peaks form.


Step 11

Spread whipped cream over strawberry layer.

Smooth with an offset spatula.


Step 12

Decorate with strawberries, lemon slices and white chocolate curls.


Step 13

Cover loosely.

Chill at least 6 hours.

Preferably overnight.


Step 14

Slice with a warm clean knife.

 

Serve cold.

Notes

✔ Use full-fat cream cheese.

✔ Always use fresh lemon juice.

✔ Dry strawberries well before mixing.

✔ Chill between layers.
