Vanilla Wafer Crust
- 2½ cups (about 250 g) finely crushed vanilla wafers
- 6 tablespoons (85 g) unsalted butter, melted
- 2 tablespoons granulated sugar
- ⅛ teaspoon fine salt
- 1 additional tablespoon melted butter, only if the crumbs fail the squeeze test
Peach Layer
- 3 cups ripe but firm peaches, peeled and diced
- ¼ cup granulated sugar
- 1 tablespoon fresh lemon juice
- 1 tablespoon cornstarch
- 2 tablespoons cold water
- ½ teaspoon vanilla extract
Lemon Cheesecake Cream
- 16 ounces (454 g) full-fat block cream cheese, softened
- ¾ cup powdered sugar
- 2 tablespoons fresh lemon juice
- 1 tablespoon finely grated lemon zest
- 1 teaspoon vanilla extract
- 1½ cups cold heavy whipping cream
Creamy Topping
- 8 ounces whipped topping, thawed but cold
- ½ cup cold heavy whipping cream
- 2 tablespoons powdered sugar
- ½ teaspoon vanilla extract
Garnish
- Fresh peach slices
- Small diced peach pieces
- Fresh lemon zest
- Crushed vanilla wafers
- White chocolate curls, optional
- Tiny fresh mint leaves, optional
Instructions
- Line a 9×13-inch baking dish with parchment paper. Leave a little parchment extending over two sides if you want easier lifting and serving.
- Finely crush the vanilla wafers. Combine the crumbs with sugar and salt.
- Add 6 tablespoons melted butter and mix until every crumb looks evenly moistened. Squeeze a small amount in your hand. It should hold its shape. If the mixture remains loose and sandy, mix in up to 1 additional tablespoon melted butter.
- Transfer the crumbs to the dish. Press them into a firm, even layer with the flat bottom of a measuring cup. Pay particular attention to the corners and edges.
- Refrigerate the crust for at least 20 minutes while preparing the peach layer.
- In a small bowl, whisk the cornstarch with 2 tablespoons cold water until completely smooth.
- Place the diced peaches, granulated sugar, and lemon juice in a medium saucepan. Stir in the cornstarch slurry.
- Cook over medium heat for about 5–7 minutes, stirring gently. The fruit should soften while remaining recognizable. The liquid should become glossy and noticeably thicker.
- Once the mixture begins to bubble gently and has thickened, cook for about 30–60 seconds more while stirring. Remove from the heat and stir in the vanilla.
- Transfer the peach mixture to a shallow bowl and allow it to cool completely. Do not place warm peach filling over the cream cheese layer.
- Beat the softened cream cheese until completely smooth.
- Add the powdered sugar and beat again until creamy and free of lumps.
- Mix in the lemon juice, lemon zest, and vanilla just until combined.
- In a separate cold bowl, whip 1½ cups cold heavy whipping cream until stiff peaks form.
- Fold about one-third of the whipped cream into the cream cheese mixture. Fold in the remaining cream in two additions using gentle strokes.
- Spread half of the lemon cheesecake mixture over the cold crust. Work gently so you do not disturb the cookie base.
- Spoon the completely cooled peach filling evenly over the cheesecake layer.
- Drop spoonfuls of the remaining cheesecake cream over the peaches. Carefully spread them together to form an even layer without pushing the fruit toward the edges.
- For the topping, whip ½ cup heavy cream with 2 tablespoons powdered sugar and ½ teaspoon vanilla until soft peaks form.
- Gently fold the freshly whipped cream into the thawed whipped topping.
- Spread the topping evenly over the cheesecake layer.
- Cover without pressing plastic wrap against the cream. Refrigerate for at least 4 hours. For cleaner layers and easier serving, refrigerate overnight.
- Shortly before serving, decorate with fresh peach slices, small peach pieces, lemon zest, vanilla wafer crumbs, white chocolate curls, and tiny mint leaves if desired.
- Serve very cold. Cut into 12 squares with a sharp knife wiped clean between cuts, or serve with a large dessert spoon for the soft layered appearance shown in the reference presentation.
Notes
- Use full-fat block cream cheese, not whipped cream cheese.
- The cream cheese should be softened, but the heavy cream must remain cold.
- Use ripe but still firm peaches. Very soft peaches can release too much liquid.
- The peach mixture must be completely cool before assembly.
- Crush vanilla wafers finely for a crust that holds together.
- The crust should pass the squeeze test before it is pressed into the pan.
- Do not automatically add the extra tablespoon of butter. Add it only if your particular wafer crumbs remain dry.
- Do not turn the peach layer into jam. Small peach pieces should remain visible.
- Chill for at least 4 hours. Overnight gives the cleanest layers.
- Add fresh peach slices and cookie crumbs shortly before serving.
- For the appearance closest to the reference image, keep the topping thick and white, use visible yellow-orange peach accents, scatter vanilla wafer pieces over the surface, and leave parts of the white cream visible.
