Vanilla Cookie Crust

Lemon Cheesecake Layer
- 8 oz (226 g) full-fat cream cheese, softened
- 1 cup powdered sugar
- ½ cup lemon curd
- 1 tbsp fresh lemon zest
- 1 tsp pure vanilla extract
Blueberry Cream Layer
- 1½ cups fresh blueberries
- 1 cup whipped topping
- ½ tsp fresh lemon juice
Whipped Topping
- 2 cups heavy whipping cream (cold)
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
Optional Stabilizer
- 2 tbsp mascarpone cheese
Garnish
- Fresh blueberries
- Thin lemon slices
- White chocolate curls
- Lemon zest
Instructions
Finely crush the vanilla cookies until they resemble sand.
Mix with melted butter, sugar, and salt.
Press firmly into a greased 9×13-inch baking dish using the bottom of a measuring cup.
Refrigerate for 20 minutes.
Step 2Beat softened cream cheese for about 3 minutes until smooth.
Add powdered sugar gradually.
Mix in lemon curd, vanilla extract, and lemon zest until creamy.
Spread evenly over the chilled crust.
Step 3Carefully fold fresh blueberries into the whipped topping.
Spread gently over the cheesecake layer without pressing too hard.
Step 4Beat the cold heavy cream with powdered sugar and vanilla until medium-stiff peaks form.
(Optional: beat in mascarpone for extra stability.)
Spread evenly over the blueberry layer.
Step 5Decorate with fresh blueberries, lemon slices, lemon zest, and white chocolate curls.
Step 6Cover and refrigerate at least 6 hours.
For the cleanest slices, refrigerate overnight.
Serve chilled.
