Ingredients
For the shortbread crust and crumble topping:
2¾ cups (344 g) all-purpose flour, spooned and leveled
¾ cup (150 g) granulated sugar
1 tbsp finely grated lemon zest
1 tsp baking powder
½ tsp fine salt
1 cup (226 g) cold unsalted butter, cut into ½-inch cubes
1 large egg yolk
1 tsp vanilla extract
For the blueberry filling:
4 cups (600 g) fresh blueberries, rinsed and patted dry (or frozen, not thawed)
½ cup (100 g) granulated sugar
3 tbsp (24 g) cornstarch (4 tbsp if using frozen berries)
2 tbsp fresh lemon juice
1 tsp finely grated lemon zest
Pinch of salt
Instructions
Heat the oven to 350°F (175°C) with a rack in the middle. Lightly grease an 8-inch square metal pan and line it with parchment, leaving a 2-inch overhang on two sides.
In a large bowl, rub the lemon zest into the sugar with your fingertips until fragrant. Whisk in the flour, baking powder and salt.
Cut in the cold butter until the largest pieces are pea-sized. Whisk the egg yolk with the vanilla, drizzle over the mixture and toss with a fork until it holds together in clumps when squeezed.
Set aside about 1⅓ cups (250 g) of the crumble for the topping and refrigerate it.
Press the remaining crumble firmly and evenly into the pan (about ½ inch thick). Prick with a fork and bake for 15 minutes, until the edges are pale gold.
Meanwhile, whisk the filling sugar, cornstarch and salt together, then gently fold in the blueberries, lemon juice and zest.
Spread the filling over the hot crust to the edges. Squeeze the cold topping into big and small clumps and scatter over the fruit, leaving a few small gaps.
Bake for 45–55 minutes, until the topping is deep golden and the filling bubbles thickly in the center. Tent loosely with foil after 35 minutes if browning too fast.
Cool on a wire rack for 2 hours, then refrigerate for 1–2 hours. Lift out with the parchment and cut into 12 bars (or 9 large) with a sharp knife, wiping the blade between cuts.
Notes
Cold butter is essential: melted butter gives a flat, greasy crumb instead of chunky clumps.
Do not skip the par-bake; it keeps the base crisp under the juicy filling.
Total oven time is 60–70 minutes: 15 minutes for the base plus 45–55 minutes once filled (add 5–10 minutes for frozen berries).
Frozen blueberries: use straight from frozen, add 1 extra tbsp cornstarch and 5–10 extra minutes of baking.
The filling is set only when it bubbles in the center, not just at the edges.
Allow about 3–4 hours of cooling and chilling (not included in Total Time) for clean slices.
Storage: covered in the fridge up to 4 days; wrapped individually in the freezer up to 3 months. Thaw overnight in the fridge.
