Pie Crust

  • 2½ cups (315g) all-purpose flour
  • 1 tsp fine salt
  • 1 tbsp granulated sugar
  • 1 cup (226g) unsalted butter, very cold and cubed
  • 68 tbsp ice water
  • 1 tsp apple cider vinegar
  • 1 egg, beaten (egg wash)

Peach Filling

  • 6 cups fresh peaches, peeled and sliced (about 8 medium peaches)
  • ¾ cup granulated sugar
  • ¼ cup light brown sugar
  • 2 tbsp cornstarch
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt

Cobbler Crumble

  • 1 cup all-purpose flour
  • ½ cup light brown sugar
  • ½ tsp cinnamon
  • ½ cup cold unsalted butter

Garnish

  • Vanilla ice cream
  • Powdered sugar
  • Fresh peach slices
  • Fresh mint leaves

Instructions

Step 1

Preheat oven to 375°F (190°C).

Lightly butter a 9-inch pie dish.


Step 2

Prepare the homemade crust.

Mix flour, sugar and salt.

Cut in the cold butter until pea-sized crumbs remain.

Add vinegar.

Slowly drizzle in ice water until the dough just comes together.

Divide into two disks.

Wrap and refrigerate for at least 1 hour.


Step 3

Roll one dough disk into a 12-inch circle.

Transfer gently into the pie plate without stretching.

Trim edges leaving a 1-inch overhang.

Crimp the edges.

Refrigerate while preparing the filling.


Step 4

Peel peaches.

Slice into ½-inch wedges.

Mix peaches with

  • sugars
  • lemon juice
  • vanilla
  • cinnamon
  • nutmeg
  • salt
  • cornstarch

Allow to rest 15 minutes.


Step 5

Pour filling into chilled crust.

Spread evenly.


Step 6

Prepare crumble.

Mix flour, brown sugar and cinnamon.

Rub cold butter into mixture until coarse crumbs form.

Do not overmix.


Step 7

Scatter crumble evenly over peaches.

Brush crust edges with egg wash.


Step 8

Bake 50–55 minutes.

If crust browns too quickly, loosely cover edges with foil during final 15 minutes.


Step 9

Pie is done when

  • crust is deep golden
  • crumble is crisp
  • filling bubbles in center

Step 10

Cool 2 hours.

Dust with powdered sugar.

Serve warm with vanilla ice cream.
