Ingredients
2 tablespoons unflavored powdered gelatin
1/2 cup cold water for blooming
3 cups hot water
1/2 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon clear lemon extract or 1 tablespoon lemon juice
A few drops pink food coloring
A few drops yellow food coloring
A few drops green food coloring
1/2 cup sweetened condensed milk or 1/2 cup coconut milk for opaque flower details
Fresh fruit pieces optional
Neutral oil spray very light coating for mold if needed
Instructions
1. Sprinkle the gelatin over the cold water and let it bloom for 5 minutes.
2. Heat the hot water in a saucepan over low heat. Add the bloomed gelatin and stir until fully dissolved. Do not boil.
3. Stir in the sugar until dissolved, then add vanilla extract and lemon extract.
4. Pour about 2 cups of the clear mixture into a clean mold or glass bowl. Chill until almost fully set.
5. Divide the remaining gelatin mixture into small bowls. Tint each bowl with food coloring.
6. Mix one or two colored bowls with condensed milk or coconut milk to create opaque shades for simple flower or petal details.
7. Use a spoon or syringe to add designs, layers, or simple shapes into the lightly set clear base.
8. Add fruit pieces if desired, then pour any remaining clear gelatin over the top.
9. Refrigerate for 4 to 6 hours, or until fully set.
10. To unmold, dip the outside of the mold briefly in warm water and invert onto a serving plate.
Notes
Do not boil gelatin or the texture may weaken.
Use filtered water for a clearer finish.
Let each layer partially set before adding the next.
For best texture, serve chilled and eat within 3 to 4 days.
