- 1 lb (450 g) fresh strawberries, plus 3–4 extra strawberries for garnish
- 20–24 crisp ladyfingers
- 2 cups (480 ml) cold heavy whipping cream
- 3/4 cup (225 g) sweetened condensed milk
- 2 teaspoons pure vanilla extract
- 2 tablespoons granulated sugar
- 1 tablespoon fresh lemon juice
- 1 pinch fine salt
- 2 ladyfingers, coarsely crushed for toppingV
Instructions
- Prepare the strawberries. Rinse the strawberries under cool running water. Dry them thoroughly. Remove the tops and slice them. Reserve 3–4 attractive strawberries for garnish.
- Macerate part of the berries. Place about two-thirds of the sliced strawberries in a bowl. Add the granulated sugar and lemon juice. Stir gently. Let them stand for 10–15 minutes, until they release some juice.
- Keep some berries fresh. Set the remaining sliced strawberries aside. These pieces will give the trifle a fresher texture.
- Whip the cream. Pour the very cold heavy whipping cream into a chilled mixing bowl. Beat at medium speed until soft peaks form. Do not overwhip.
- Prepare the vanilla base. In another bowl, stir the sweetened condensed milk, vanilla extract, and salt until combined.
- Make the filling. Gently fold about one-third of the whipped cream into the condensed milk mixture. Fold in the remaining cream in two additions. Stop when the filling is smooth and fluffy.
- Start the trifle. Break several ladyfingers into chunky pieces. Arrange a layer in the bottom of a clear 2.5–3 quart serving bowl.
- Moisten lightly. Spoon only a small amount of the strawberry juice over the ladyfingers. Do not soak them.
- Add the layers. Add strawberries followed by a generous layer of vanilla cream. Repeat with ladyfingers, a little strawberry juice, strawberries, and cream until the bowl is filled.
- Create the strawberry swirl. Lightly crush 2–3 tablespoons of the macerated strawberries. Spoon small amounts over the upper cream layer. Drag a spoon through the cream once or twice to create irregular strawberry ribbons.
- Freeze. Cover the bowl tightly. Freeze for 4–6 hours, or until firm but still scoopable after a short rest.
- Finish the dessert. Before serving, decorate with fresh strawberry halves and slices, coarse ladyfinger crumbs, and a small mint sprig if desired.
- Serve. If frozen overnight, move the trifle to the refrigerator for about 30 minutes, then let it stand briefly at room temperature as needed until a spoon passes through the layers comfortably.
Notes
- Cold cream matters: Keep the heavy cream refrigerated until whipping.
- Dry the berries well: Excess water can contribute to icier texture.
- Do not soak the ladyfingers: A light drizzle of strawberry juice is enough.
- Do not overwhip the cream: Stop around soft peaks.
- Fold gently: This keeps more air in the filling.
- For the photo-style finish: Keep the layers rustic. Allow strawberry streaks and pieces of ladyfinger to remain visible through the glass.
- Overnight freezing: The dessert will become firmer. Give it time to soften before scooping.
- Food safety: Keep the freezer at 0°F (-18°C) or below. The FDA also recommends not leaving perishable foods at room temperature for more than two hours, or one hour when the temperature is above 90°F (32°C).
