This Easy Lemon 7-Up Cake is a classic Southern Bundt cake with a buttery crumb, fresh lemon zest, and lemon-lime soda for exceptional moisture. Finished with a bright homemade lemon glaze, it’s perfect for holidays, brunches, birthdays, family gatherings, or anytime you crave an old-fashioned homemade dessert.

Lemon Cake

  • 3 cups (360 g) all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon fine salt
  • 1 cup (227 g) unsalted butter, softened
  • ½ cup (95 g) vegetable shortening
  • 3 cups (600 g) granulated sugar
  • 5 large eggs, room temperature
  • 2 tablespoons fresh lemon zest
  • 1 teaspoon pure lemon extract
  • ¾ cup (180 ml) 7-Up® lemon-lime soda (room temperature)
  • 1 teaspoon vanilla extract

Lemon Glaze

  • 2 cups (240 g) powdered sugar
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon 7-Up®
  • 1 teaspoon finely grated lemon zest

Decoration

 

  • Thin lemon slices
  • Candied lemon peel
  • Fresh mint leaves
  • Fresh lemon zest
  • Powdered sugar (optional)

Instructions

Step 1

Preheat the oven to 325°F (165°C).

Position the oven rack in the center.

Grease every curve of a 10-inch Bundt pan with butter or baking spray.

Dust lightly with flour and tap out the excess.


Step 2

Whisk together:

  • flour
  • baking powder
  • salt

Set aside.


Step 3

Using a stand mixer, beat butter, shortening and sugar for 5–7 minutes until the mixture becomes pale, fluffy and noticeably larger.

This step creates the cake’s soft texture.


Step 4

Add eggs one at a time.

Beat about 30 seconds after each addition.

Scrape the bowl frequently.


Step 5

Mix in

  • vanilla
  • lemon extract
  • fresh lemon zest

Step 6

Reduce mixer speed to low.

Alternate adding flour mixture and 7-Up.

Begin with flour.

Finish with flour.

Mix only until combined.


Step 7

Pour batter into prepared Bundt pan.

Smooth the top.

Tap the pan gently twice to remove large air bubbles.


Step 8

Bake 60–65 minutes.

The cake is done when

  • toothpick comes out clean
  • center springs back
  • internal temperature reaches 205–210°F (96–99°C)

Step 9

Cool inside the pan for 15 minutes.

Invert carefully onto a cooling rack.

Allow to cool another 45 minutes.


Step 10

Whisk together

  • powdered sugar
  • lemon juice
  • 7-Up
  • lemon zest

until smooth.

Pour over the slightly warm cake.

 

Decorate before the glaze fully sets.

Notes

✔ Always use room-temperature butter, eggs and soda.

✔ Do not overmix once flour has been added.

✔ Fresh lemons provide the brightest flavor.

✔ Grease every detail of the Bundt pan.

✔ Spoon flour into measuring cups instead of scooping directly.

✔ Allow the glaze to soak into the warm cake.

✔ Do not refrigerate immediately after baking.
