These soft baked cinnamon sugar donuts are fluffy, buttery, and incredibly easy to make. Ready in under 30 minutes, they’re perfect for breakfast, brunch, dessert, or an afternoon coffee break. No deep fryer required.

For the Donuts

  • 1½ cups (190 g) all-purpose flour
  • ½ cup (100 g) granulated sugar
  • 1½ tsp baking powder
  • ½ tsp fine salt
  • ½ tsp ground nutmeg
  • ½ cup (120 ml) whole milk, room temperature
  • 2 large eggs, room temperature
  • ¼ cup (55 g) unsalted butter, melted and cooled slightly
  • 1 tsp pure vanilla extract

Cinnamon Sugar Coating

  • ¼ cup (55 g) unsalted butter, melted
  • ½ cup (100 g) granulated sugar
  • 1 tbsp ground cinnamon

Instructions

Step 1

Preheat the oven to 375°F (190°C).

Grease a non-stick donut pan thoroughly with butter or baking spray.


Step 2

In a large bowl whisk together:

  • flour
  • sugar
  • baking powder
  • salt
  • nutmeg

Whisk for about one minute to evenly distribute the baking powder.


Step 3

In another bowl whisk together:

  • milk
  • eggs
  • melted butter
  • vanilla extract

The mixture should be smooth and fully combined.


Step 4

Pour the wet ingredients into the dry ingredients.

Using a silicone spatula, gently fold until no dry flour remains.

Do not overmix.

The batter should remain slightly lumpy.


Step 5

Transfer the batter into a piping bag (or a zip bag with one corner cut).

Fill each donut cavity about ¾ full.

Avoid overfilling.


Step 6

Bake for 10–12 minutes.

The donuts are ready when:

  • lightly golden
  • spring back when touched
  • toothpick comes out clean

Step 7

Let cool in the pan for 5 minutes.

Transfer to a cooling rack.


Step 8

Mix the cinnamon and sugar in a shallow bowl.

Brush each warm donut generously with melted butter.

Immediately coat both sides in cinnamon sugar.


Step 9

Serve warm or at room temperature.

Notes

✔ Use room-temperature ingredients.

✔ Spoon and level the flour instead of scooping directly.

✔ Mix only until combined.

✔ Pipe the batter for perfectly shaped donuts.

✔ Fresh nutmeg provides noticeably better flavor.

✔ Brush—not dip—the donuts with butter if you prefer a thinner coating.

✔ To obtain the same golden crust shown in the photos, lightly brush the donuts with melted butter immediately after baking, let them rest for one minute, then coat with cinnamon sugar.

✔ These donuts taste even better 20 minutes after baking.
