This Blueberry Lemon Cream Dream is a refreshing no-bake dessert made with a buttery vanilla cookie crust, creamy lemon cheesecake filling, fresh blueberries, fluffy whipped cream, and beautiful citrus garnish. Vanilla Cookie Crust

  • 2½ cups finely crushed vanilla cookies (about 300 g)
  • ½ cup (113 g) unsalted butter, melted
  • 2 tbsp granulated sugar
  • ¼ tsp fine sea salt

Lemon Cheesecake Layer

  • 8 oz (226 g) full-fat cream cheese, softened
  • 1 cup powdered sugar
  • 3 tbsp fresh lemon juice
  • 1 tbsp fresh lemon zest
  • 1 tsp pure vanilla extract

Blueberry Cream Layer

  • 2 cups fresh blueberries
  • 1 cup whipped topping

Homemade Whipped Cream

  • 2 cups cold heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Decoration

 

  • Fresh blueberries
  • Thin lemon slices
  • White chocolate curls
  • Fresh lemon zest

Instructions

1. Prepare the crust

Finely crush the vanilla cookies.

Mix with melted butter, sugar and salt until the crumbs resemble wet sand.

Firmly press into a greased 9×13-inch baking dish using the bottom of a measuring cup.

Refrigerate for 20–30 minutes.


2. Make the cheesecake layer

Beat softened cream cheese until completely smooth.

Mix in powdered sugar.

Add lemon juice, lemon zest and vanilla.

Continue mixing until silky.

Spread evenly over the chilled crust.


3. Prepare the blueberry layer

Wash blueberries.

Dry them thoroughly with paper towels.

Gently fold into the whipped topping.

Spread carefully over the cheesecake layer.


4. Make whipped cream

Using a chilled bowl, whip heavy cream with powdered sugar and vanilla until stiff peaks form.

Spread evenly over the blueberry layer.


5. Decorate

Top with

  • Fresh blueberries
  • Lemon slices
  • White chocolate curls
  • Lemon zest

6. Chill

Cover.

Refrigerate for at least 6 hours.

For best texture, chill overnight.

Slice with a warm knife.

 

Serve cold.

Notes

  • Always use full-fat cream cheese.
  • Fresh lemon juice gives much better flavor than bottled juice.
  • Dry blueberries well before folding into the cream.
  • Chill the dessert overnight for the cleanest slices.
  • Freeze the mixing bowl before whipping the cream.
  • Press the crust firmly to prevent crumbling.
