- 1 (15.25 oz / 432 g) box Butter Pecan Cake Mix
- 2 large eggs, room temperature
- ½ cup (113 g) unsalted butter, melted and cooled for 5 minutes
Optional (Highly Recommended)
- ¼ cup toasted pecans, chopped
- ½ teaspoon vanilla extract
- pinch fine sea salt
- coarse sanding sugar
- white chocolate drizzle
- powdered sugar for dusting
Instructions
Step 1
Preheat oven to 350°F (175°C).
Line two baking sheets with parchment paper.
Step 2
Melt the butter.
Allow it to cool for about 5 minutes before mixing.
Step 3
In a large mixing bowl combine
- cake mix
- eggs
- melted butter
Mix until a thick cookie dough forms.
If the dough seems too sticky, stir in 1–2 tablespoons all-purpose flour.
Step 4
Fold in toasted chopped pecans if using.
Do not overmix.
Step 5
Using a medium cookie scoop (about 40 g each), roll dough into balls.
Arrange cookies 2 inches apart.
Flatten slightly.
Top with extra pecan pieces if desired.
Step 6
Bake
10–12 minutes
The edges should be lightly golden while the centers remain slightly soft.
Step 7
Cool on baking sheet
5 minutes
Transfer to wire rack
Cool another
10–15 minutes
Step 8
Serve at room temperature.
Optional
Dust with powdered sugar or drizzle with melted white chocolate.
Notes
