This Zucchini Beef Stir-fry is packed with tender beef, crisp zucchini, and a flavorful sauce, making it a perfect meal for busy weeknights. Quick, easy, and delicious!

  • Beef & Marinade:
    • 1 lb beef (sirloin or flank steak), thinly sliced
    • 2 tbsp soy sauce
    • 1 tsp cornstarch
    • 1 tsp sesame oil
  • Stir-Fry:
    • 2 medium zucchinis, sliced into half-moons
    • 1 tbsp vegetable oil (or peanut oil)
    • 2 cloves garlic, minced
    • 1 tsp ginger, grated
    • 1/2 onion, sliced
  • Sauce:
    • 2 tbsp oyster sauce
    • 1 tbsp hoisin sauce
    • 1/4 cup beef broth
    • 1 tsp cornstarch (for thickening, optional)
  • Garnish:
    • 1 tsp sesame seeds
    • 2 tbsp green onions, chopped

Instructions

  • Marinate the Beef – In a bowl, mix sliced beef with soy sauce, cornstarch, and sesame oil. Let it marinate for 15 minutes.
  • Prepare Ingredients – Slice zucchini, mince garlic and ginger, and thinly slice the onion.
  • Heat Oil – Heat a wok or large skillet over medium-high heat. Add oil.
  • Cook Beef – Stir-fry beef for 2-3 minutes until browned. Remove and set aside.
  • Sauté Aromatics – In the same pan, add garlic, ginger, and onions. Stir-fry for 30 seconds until fragrant.
  • Cook Zucchini – Add sliced zucchini and cook for 2-3 minutes until slightly tender.
  • Combine Everything – Return beef to the pan. Add oyster sauce, hoisin sauce, and beef broth. Stir well and cook for 1 minute.

 

  • Garnish & Serve – Sprinkle sesame seeds and green onions. Serve with steamed rice or noodles.

Notes

  • Use a high-smoke-point oil like peanut or vegetable oil for best results.
  • For a spicier version, add chili flakes or sriracha.
  • Adjust sauce consistency by adding more beef broth or thickening with cornstarch slurry.
