- 2 cups mashed sweet potatoes (about 2 large sweet potatoes)
- 1/2 cup granulated sugar

- 1/2 cup unsalted butter, melted
- 3/4 cup evaporated milk or almond milk

- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 unbaked pie crust
Instructions
Prepare the Sweet Potatoes:
- Preheat the oven to 400°F (200°C).
- Pierce sweet potatoes with a fork and bake for 50-60 minutes or until tender. Let them cool, peel, and mash until smooth.
Mix the Filling:
- In a large bowl, combine mashed sweet potatoes, sugars, melted butter, and evaporated milk. Mix well.
- Add eggs, vanilla extract, cinnamon, nutmeg, and salt. Whisk until the mixture is smooth and well-combined.
Assemble the Pie:
- Roll out the pie crust and fit it into a 9-inch pie dish. Trim and crimp edges as desired.
- Pour the filling into the prepared crust and smooth the top.
Bake the Pie:
- Reduce oven temperature to 350°F (175°C). Bake for 50-60 minutes, or until the filling is set and a knife inserted in the center comes out clean.
- Cool completely on a wire rack before slicing.
Notes
- For a lower-sugar version, substitute granulated sugar with stevia or monk fruit.
- Dairy-free? Use almond or coconut milk in place of evaporated milk.
- Garnish with a dollop of whipped cream and a sprinkle of cinnamon for extra flavor.
