  • Total Time: 75 minutes
  • Yield: 8 servings 1x

Ingredients

Scale
  • 2 cups mashed sweet potatoes (about 2 large sweet potatoes)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 3/4 cup evaporated milk or almond milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 unbaked pie crust

Instructions

  1. Prepare the Sweet Potatoes:

    • Preheat the oven to 400°F (200°C).
    • Pierce sweet potatoes with a fork and bake for 50-60 minutes or until tender. Let them cool, peel, and mash until smooth.
  2. Mix the Filling:

    • In a large bowl, combine mashed sweet potatoes, sugars, melted butter, and evaporated milk. Mix well.
    • Add eggs, vanilla extract, cinnamon, nutmeg, and salt. Whisk until the mixture is smooth and well-combined.
  3. Assemble the Pie:

    • Roll out the pie crust and fit it into a 9-inch pie dish. Trim and crimp edges as desired.
    • Pour the filling into the prepared crust and smooth the top.
  4. Bake the Pie:

    • Reduce oven temperature to 350°F (175°C). Bake for 50-60 minutes, or until the filling is set and a knife inserted in the center comes out clean.
    • Cool completely on a wire rack before slicing.

Notes

  • For a lower-sugar version, substitute granulated sugar with stevia or monk fruit.
  • Dairy-free? Use almond or coconut milk in place of evaporated milk.
  • Garnish with a dollop of whipped cream and a sprinkle of cinnamon for extra flavor.
