  • 1 cup Panko breadcrumbs
  • ½ cup grated Parmesan cheese

  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 eggs, beaten
  • 2 cups vegetable oil (for frying)

Instructions

  1. Marinate Chicken: Soak chicken breasts in buttermilk for at least 2 hours.
  2. Prepare Coating: In one bowl, mix flour, cornstarch, salt, pepper, paprika, and garlic powder. In another, combine breadcrumbs, Parmesan, and Italian seasoning.
  3. Breading Process: Coat chicken in flour mixture, dip in beaten eggs, then press into breadcrumb mixture.
  4. Frying: Heat oil to 350°F (175°C). Fry chicken for 6-8 minutes until golden brown and cooked through.
  5. Drain & Serve: Place on a wire rack and let excess oil drain. Serve with pasta and a creamy sauce.
