- 2 boneless, skinless chicken breasts
- 1 cup buttermilk
- 1 cup all-purpose flour
- ½ cup cornstarch
- 1 cup Panko breadcrumbs
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 2 eggs, beaten
- 2 cups vegetable oil (for frying)
Instructions
- Marinate Chicken: Soak chicken breasts in buttermilk for at least 2 hours.
- Prepare Coating: In one bowl, mix flour, cornstarch, salt, pepper, paprika, and garlic powder. In another, combine breadcrumbs, Parmesan, and Italian seasoning.
- Breading Process: Coat chicken in flour mixture, dip in beaten eggs, then press into breadcrumb mixture.
- Frying: Heat oil to 350°F (175°C). Fry chicken for 6-8 minutes until golden brown and cooked through.
- Drain & Serve: Place on a wire rack and let excess oil drain. Serve with pasta and a creamy sauce.

- Air Fryer Method: Cook at 400°F (200°C) for 12-15 minutes, flipping halfway.
- Baking Method: Bake at 425°F (220°C) for 20-25 minutes on a wire rack.
