Ingredients

  • 3 lbs corned beef brisket (flat or point cut)
  • 4 cups beef broth (or dark beer like Guinness)
  • 1 packet corned beef seasoning (or homemade spice mix)
  • 1 onion, quartered
  • 3 garlic cloves, smashed
  • 4 carrots, peeled and chopped
  • 6 baby potatoes, halved
  • 1/2 head cabbage, cut into wedges
  • 2 bay leaves

 

  • 1 tsp black peppercorns

Instructions

  1. Prepare the Corned Beef

    • Rinse corned beef instant pot brisket to remove excess salt.
    • Place it on the trivet inside the Instant Pot.
  2. Add the Ingredients

    • Pour in beef broth (or beer).
    • Sprinkle the seasoning packet over the beef.
    • Add onions, garlic, bay leaves, and black peppercorns.
  3. Pressure Cook the Corned Beef

    • Set Instant Pot to HIGH pressure for 90 minutes.
    • Allow natural release for 15 minutes, then manually release remaining pressure.
  4. Cook the Vegetables

    • Remove the corned beef, cover with foil to rest.
    • Add potatoes and carrots, cook on HIGH pressure for 4 minutes.
    • Add cabbage, cook for 2 more minutes.
    • Quick-release pressure and serve.
  5. Slice and Serve

    • Slice corned beef against the grain for maximum tenderness.
    • Serve with mustard or horseradish sauce and enjoy!

  • For a richer flavor, substitute beef broth with dark beer.
