Crispy Golden Bites Recipe

Ingredients

  • 1 cup whole corn kernels (fresh, frozen, or canned, drained)
  • ½ cup creamed corn
  • ¾ cup all-purpose flour
  • ¼ cup cornmeal
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 egg
  • ½ cup milk

 

  • 2 cups oil for frying (peanut, canola, or vegetable oil)

Instructions

  • Prepare the Mixture: In a bowl, mix creamed corn and whole corn kernels.
  • Freeze: Form small mounds on a baking sheet and freeze for 3 hours.
  • Make the Batter: Whisk together flour, cornmeal, baking powder, salt, and pepper. In another bowl, whisk the egg and milk. Combine wet and dry ingredients.
  • Heat Oil: In a deep pan, heat oil to 350°F (175°C).
  • Coat & Fry: Dip frozen mounds in batter and fry for 3-4 minutes until golden brown.

 

  • Drain & Serve: Remove with a slotted spoon and place on paper towels to drain excess oil. Serve warm with your favorite dip.

Notes

  • Freezing the mixture before frying helps maintain shape and prevents them from breaking apart.
  • For a cheesy version, mix in shredded cheddar or pepper jack cheese.
  • Baking or air frying options are available for a healthier alternative.
