- 1 cup whole corn kernels (fresh, frozen, or canned, drained)
- ½ cup creamed corn
- ¾ cup all-purpose flour
- ¼ cup cornmeal
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 egg
- ½ cup milk
- 2 cups oil for frying (peanut, canola, or vegetable oil)
Instructions
- Prepare the Mixture: In a bowl, mix creamed corn and whole corn kernels.
- Freeze: Form small mounds on a baking sheet and freeze for 3 hours.
- Make the Batter: Whisk together flour, cornmeal, baking powder, salt, and pepper. In another bowl, whisk the egg and milk. Combine wet and dry ingredients.
- Heat Oil: In a deep pan, heat oil to 350°F (175°C).
- Coat & Fry: Dip frozen mounds in batter and fry for 3-4 minutes until golden brown.
- Drain & Serve: Remove with a slotted spoon and place on paper towels to drain excess oil. Serve warm with your favorite dip.
Notes
- Freezing the mixture before frying helps maintain shape and prevents them from breaking apart.
- For a cheesy version, mix in shredded cheddar or pepper jack cheese.
- Baking or air frying options are available for a healthier alternative.
