Ingredients

  • 1 lb chicken breast or thighs, thinly sliced

  • 1 large onion, thinly sliced

  • 1 green pepper, sliced (optional red or yellow for color)

  • 4 slices provolone cheese (or American/cheddar)

  • 2 hoagie rolls, split and lightly toasted

  • 2 tbsp olive oil or butter

  • ½ tsp garlic powder

  • Salt & black pepper to taste

Instructions

  • Heat oil in skillet over medium-high.

  • Add chicken, season with salt, pepper, and garlic powder. Cook 4–5 minutes until golden. Remove.

  • In same pan, sauté onions and peppers until soft and caramelized.

  • Return chicken to pan, mix well.

  • Lay cheese slices over chicken/veggies. Cover for 1 min until melted.

  • Toast hoagie rolls lightly.

  • Fill rolls with hot mixture. Serve immediately.

Notes

  • For extra heat, stir in sliced jalapeños while cooking the peppers or finish with a drizzle of hot sauce.  
  • For a smoky twist, try smoked gouda or chipotle cheddar—it transforms the flavor.  
  • To prevent sogginess, toast your rolls until slightly crisp and assemble the sandwich right before serving.  
  • If making ahead, wrap each sandwich in foil and warm in the oven at 300°F (150°C) for 10 minutes before serving.
