Ingredients
1 lb chicken breast or thighs, thinly sliced
1 large onion, thinly sliced
1 green pepper, sliced (optional red or yellow for color)
4 slices provolone cheese (or American/cheddar)
2 hoagie rolls, split and lightly toasted
2 tbsp olive oil or butter
½ tsp garlic powder
Salt & black pepper to taste
Instructions
Heat oil in skillet over medium-high.
Add chicken, season with salt, pepper, and garlic powder. Cook 4–5 minutes until golden. Remove.
In same pan, sauté onions and peppers until soft and caramelized.
Return chicken to pan, mix well.
Lay cheese slices over chicken/veggies. Cover for 1 min until melted.
Toast hoagie rolls lightly.
Fill rolls with hot mixture. Serve immediately.

- For extra heat, stir in sliced jalapeños while cooking the peppers or finish with a drizzle of hot sauce.
- For a smoky twist, try smoked gouda or chipotle cheddar—it transforms the flavor.
- To prevent sogginess, toast your rolls until slightly crisp and assemble the sandwich right before serving.
