- 3 overripe bananas, mashed
- 2 eggs, room temperature
- ½ cup sugar (or honey)
- 1 ½ cups self-rising flour
Instructions
- Preheat oven to 350°F (175°C). Grease an 8.5 x 4.5-inch loaf pan.
- Mash bananas in a bowl until mostly smooth.
- Whisk eggs into the mashed bananas. Stir in sugar until combined.
- Gently fold in self-rising flour. Mix until no dry spots remain.
- Pour batter into the prepared loaf pan.
- Bake for 50-55 minutes or until a toothpick inserted in the center comes out clean.
- Cool for 15 minutes in the pan, then transfer to a wire rack.
Notes
- Use overripe bananas with brown spots for the best flavor.
- Do not overmix the batter to keep the bread soft and fluffy.
- Store at room temperature for 4 days, in the fridge for 1 week, or freeze for up to 3 months.
